On the outskirts of the village of Artalens, Corinne and Joël rear passionately, respecting traditions, quality labelled farm chickens and mallard ducks.
At their place, you will find quality chicken fed on farm maize, green and juicy grass from the slopes of Artalens, giving a top quality, tasty meat.
At the moment, the farm proposes entire ducks with foie gras (5,5 Kg with the foie about 450 to 600g) or chopped up. Reserve in advance.
The red chicken is proposed after 4 months open air rearing.

Roast Royal Duck Recipe (12/14 servings)

To be cooked in the morning for the evening or the day before for lunch time.
- Use a good mallard from chez Corinne and Joël Fédacou at Artalens, reared on the farm in open air, up to maturity ...
- Season with salt and pepper (Do not add any grease)
- Reheat oven at No 6. When hot cook for 1h 1/4, taking out the grease as necessary. No need to cover the meat as it will be juicy
- Once the meat is cold, cut into slices, place on a dish with a few spoons of water
- Put into a warm oven for 10 minutes before serving.
- Serve with roast potatoes, French beans, potatoes with bolet mushrooms, ...
